Corn Dog Muffin Recipe

Ingredients
 120 g plain flour
 120 g PAN yellow maize flour
 ½ tbsp baking powder
 ¼ tsp kosher salt
 200 ml milk
 50 ml natural yoghurt
 115 g grams unsalted butter (melted)
 50 g sugar
 2 large eggs
 4 hotdogs cut in to 1inch pieces

Preheat oven to 120c (375 degrees F). Place muffin cases on to a muffin tray; set aside.

In a large bowl, combine flour, cornmeal, salt, and baking soda.

In a large jug whisk together milk, yoghurt, butter, sugar and eggs.

Pour the liquid over dry ingredients and mix until mixed well.

Scoop 1 tbsp of the mixture in to each muffin case and place 1 piece of hotdog in to the centre, cover it with a little bit of batter.

Place in the oven to bake for around 10 minutes, or until golden brown.

Place on a wire rack to cool down.
