Recipe: Corn Dog Muffin Recipe For Hungry Kids

My boys are forever hungry. When the summer holidays arrives, I know full well that I will be spending most of my ‘vacation’ time in the kitchen. They know that I’m game when it comes to cooking, but when they asked me to make corn dogs I was not too keen on the idea. Fried stuff for snacks? Not to mention the processed sausages too?!

I just nodded and thought of a better alternative. They like cakes, and they like hotdogs. So why not make a corn dog muffin? Makes sense right?  Sweet and savoury. Small, and ideal to eat anytime of the day. OK it might not be the healthiest alternative, but it was a definite hit with the kids.

This recipe makes approximately 18 small muffins, more than enough to last for a couple of days, OR LESS if you have bottomless kids like mine!
